Crispy Vegetable Dip

This dip is a wonderful low calorie snack and a great way to contribute to your vegetable intake.

Ingredients:

Yield: 1 3/4 cups
12 oz jar of mild or medium chunky salsa
1/4 cup chopped celery
1/4 cup chopped cucumber
1/4 cup shredded carrot
1 Tbsp finely chopped parsley
Snack Crackers

In a bowl, stir together the salsa, celery, cucumber, carrot and parsley.
Refrigerate for at least 1 hour to blend the flavors.
Serve as a dip with crackers.
