Whole Wheat Pasta with Roasted Cherry Tomatoes and Garlic

Trying to decide what to do with the overabundance of tomatoes you have? Whether you have access to fresh, garden tomatoes or buy them from the grocery store, tomatoes are a rich source of vitamins A & C and the phytochemical lycopene, a cancer-fighting antioxidant.

 

Cooking time: 30 minutes

Ingredients:

Yield: 6 - 1 cup servings

olive oil cooking spray
1 pint cherry tomatoes, washed, stems removed
8 oz whole wheat spiral pasta or macaroni
2 Tbsp fresh parsley, chopped
2 tsp olive oil
2 cloves garlic, minced
2 Tbsp fresh basil, chopped
salt and pepper to taste
2-4 Tbsp grated parmesan cheese

Preheat oven to 400 degrees.
Spray large baking sheet with cooking spray.
Cut tomatoes in half. Place tomatoes on prepared pan, cut side up.
Roast 25-30 minutes, until tender and shriveled.
Meanwhile, cook pasta according to package directions. Drain and cover with foil to keep warm.
In large skillet, heat oil over medium heat.
Add garlic and cook 2 minutes.
Add roasted tomatoes and cook 1 minute.
Add pasta and cook 1 minute, to heat through.
Remove from heat and stir in basil. Season to taste with salt and pepper.
Transfer pasta mix to individual plates and top with Parmesan cheese.
