Unbeatable Meatloaf

One of the best things you can do for your self and your family is to encourage eating more vegetables. Higher intakes of vegetables (along with a low fat diet) have been linked to lower rates of certain cancers and heart disease. Look for ways to make vegetables more enjoyable such as in this recipe which uses a lower fat meat and colorful vegetables.

 

Cooking time: 60 minutes

Ingredients:

Yield: 4 servings
1/2 pound ground turkey breast
1/2 pound ground turkey
1/3 cup ketchup
1 cup unseasoned breadcrumbs
3/4 cup finely chopped onion
1 tsp dried basil
2 tsp dried oregano
2 garlic cloves, minced
2 large egg whites
1/2 cup shredded carrots
1/4 cup chopped fresh parsley
1/4 cup green pepper, minced
1/4 cup red pepper, minced
salt and pepper to taste
3 Tbsp ketchup as garnish (optional)

Preheat oven to 350 degrees.
Combine all ingredients, except for extra ketchup, in a large bowl.
Place mixture in a 9x5 inch nonstick loaf pan.
Bake for one hour, uncovered. Let stand l0 minutes before serving.
Cut into slices and serve with a spinach or green salad.
