Unbeatable Meatloaf
One of the best things you can do for your self and your
family is to encourage eating more vegetables. Higher intakes of vegetables
(along with a low fat diet) have been linked to lower rates of certain
cancers and heart disease. Look for ways to make vegetables more enjoyable
such as in this recipe which uses a lower fat meat and colorful vegetables.

pound ground turkey breast |

cup ketchup |

cup unseasoned breadcrumbs |

cup finely chopped onion |

tsp dried basil |

tsp dried oregano |

garlic cloves, minced |

2 large egg whites |

cup shredded carrots |

cup chopped fresh parsley |

cup green pepper, minced |

Tbsp ketchup as garnish (optional) |

Preheat oven to 350 degrees. |

Combine all
ingredients, except for extra ketchup, in a large bowl. |

Place mixture
in a 9x5 inch nonstick loaf pan. |

Bake for one
hour, uncovered. Let stand l0 minutes before serving. |
 |
Cut into slices
and serve with a spinach or green salad. |
