Summer Fruit Medley

Fruits are a wonderful source of fiber and many vitamins, particularly Vitamins A & C. Take advantage of the fresh summer fruits with this colorful combination.

 
Prep time: 15 min

Ingredients:

Yield: 4 - 1 cup servings
1 1/2 cups cantlaoupe, cut
1 1/2 cups honeydew melon, cut
1 cup sliced fresh strawberries
1/2 cup plain fat-free yogurt
1/2 cup orange juice
1/4 cup lemon juice
1/2 tsp ground ginger
2 Tbsp sugar or sugar substitute equivalent
1/2 cup reduced-fat or no fat sour cream

Combine all ingredients except the sour cream.
Chill for 1-2 hrs.
Garnish with a dollop of sour cream prior to serving.

Experiment with the addition of other fruits such as grapes, chopped apples, chopped pears, raisins, etc.
