Carribbean Beef Steak
Enjoy Beef! Beef easily fits into the Dietary
Guidelines for Americans and is an excellent source of Iron and Zinc in
the diet.
Remember- whenever you marinate meats,
it's important to never brush the food item with the marinade it soaked
in - it could be contaminated. Always save back some marinade when preparing
to coat the item, and use that for grilling.

Yield:

beef top round steak, 1" thick (about 11/2 pounds |

3/4
cup Italian Dressing (oil free dressing may be used) |

Tbsp Worcestershire sauce |

Tbsp firmly packed brown sugar |

1
large jalapeno pepper, seeded and finely chopped |

1
tsp ground allspice |
| • |
1
tsp ground ginger |

For marinade, combine
all ingredients except steak. |

In large, shallow non-aluminum
baking dish or plastic bag, pour 1/2 cup marinade over the steak;
turn to coat. Cover or close the bag. Refrigerate remaning marinade. |

Marinate in refigerator,
turning occasionally, 6 - 24 hours. |

Remove steak from marinade.
Discard marinade. |
 |
Grill, turning occasionally
and brushing frequently with refrigerated marinade, 16 - 18 minutes
or until steak is medium rare to medium doneness. |
