Is An Egg A Day Okay?

The American Heart Association has relaxed its egg warnings and now says that for most people, a healthy diet that is not high in cholesterol can include an egg a day (maximum 7 eggs per week). Previously, researchers thought eggs contained around 275 mg of cholesterol but now they have found eggs contain 214-220 mg of cholesterol. Eggs are a wonderful source of protein, vitamins, and minerals, so enjoy them!

 
Cooking time: 30 Minutes

Ingredients:

Yield: 4 servings
4 eggs
1/4 cup water
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon butter
1/2 cup cubed, day-old French bread
1/2 cup chopped fresh broccoli
1/4 cup chopped sweet red pepper
1 tablespoon chopped onion
2 tablespoons shredded Cheddar cheese

In small bowl, beat together eggs, water, salt, and pepper until blended. Set aside.
Preheat broiler.
In 10-inch omelet pan or skillet with ovenproof handle (wrap handle completely with aluminum foil) over medium heat, heat butter until just hot enough to sizzle a drop of water.
Add bread cubes, broccoli, red pepper, and onion. Cook, stirring occasionally, until bread cubes are lightly toasted.
Pour egg mixture into pan. Cook until eggs are almost set, about 10 to 12 minutes.
Sprinkle with cheese and broil about 6 inches from heat until eggs are set, about 1 to 2 minutes.
Slide onto serving platter and cut in wedges.
